By leaving gray open, you're allowing sewer gas to travel from the sewer itself up and along your sewer hose, along your gray pipes and upwards through the roof vents.
If this is the case, then I'll bet you notice that the smell is worse outside than inside the rig. (If it's bad inside, then check your traps.)
A simple solution to the problem is simply to loop your sewer hose over itself, creating a trap directly in the hose. You'll need to run enough water into the sewer hose to create the trapping effect. (Of course, you should unloop the sewer hose when you want to dump the black tank.)
