I turn mine off on the stick and bricks when leaving for any longer duration. Two experiences there, one with a water heater that sprung a leak when I was in the military and renting, the other incident involved a toilet valve failing while I was gone. No damage from that other than the bank account when I got the water bill. It's amazing how much water you can flush down the drain in just a few weeks.
Over time, just about everything on every RV I have owned has loosened up. I'm pretty good at turning off the water heater and pump when applicable, and generally turn off the water when on city hookups when I'm going to be gone all day.
