Glad to hear you made it thru unhurt. Obviously you've figured out the value of knowing your tongue weight and continue to learn how to measure it.
As for what saved you? I'm guessing the stability control on the Suburban kicked in and straightened you out. Without a doubt, your Suburban has stability control, just perhaps not trailer stability control. I'm not sure exactly what the difference is other than when a tow vehicle has trailer stability control, it might have an additional sensor or is programed to monitor the existing sensors for a situation of trailer sway? Regardless, I'm guessing that if your sway was bad enough, the standard stability control was able to detect that correction was needed and it worked. If that wasn't it, I don't know what it was. It does make quite a racket as different brakes are activated to keep the vehicle on the intended path. My Cruze has it and has only activated in the winter under slippery conditions.
I believe it was federally required on all passenger vehicles starting in 2009.
