I would question both the tow rating and the within the vehicle's tow capacity. I thought the on ly way to get 10k tow rating with GMT900 was with the 6.2L and NHT packages. 7k dry means 8000-8500 loaded for a longer trip with maybe over 1000 pounds of loaded tongue weight. Your 1000 pound bar WD bars may not be sufficient. Beyond that, your truck may be over rear axle rating or GVWR.
I recommend a trip to the scales to determine where you stand with respect to all its ratings. Take 3 passes, truck alone, truck with tongue on ball, truck with trailer with WDH. This will help us understand what your TW% is and how well your WDH is adjusted.
