Thinking about getting a tankless (Girard?) and the tech we spoke to said that it wastes about 2 gallons of water just by turning on the hot water to get it hot, and that once it cools down, it wastes...

I have a Precision Temp RV-550 and without some sort of recycling it does waste water. I built in the ability to recycle (bypass) hot water back into the potable water holding tank. I installed an electronic valve with a switch just above the sink. I let the hot water bypass for 10-20 seconds.
The nice thing about them is that you get an endless supply of hot water. I personally went after the low weight.
