Arthritis results from inflammation. I hope you two can figure out if something in her diet (high fructose corn syrup and sugar, perhaps?) is causing the inflammation. Also I hope you'll read up on all the natural anti-inflammatory substances; maybe there's a combination of stuff (like Boswellia, Glucosamine/Condroitin/MSM, ginger, turmeric, willow bark, etc.) that would give her some relief. Sorry to hear that you aren't camping any more!
