Can't say you'll not have any better stability with a dually, but then again a class8 tractor would pull it even better.
10k 5ver, I'd argue that you'll be sufficiently over trucked with a new long bed srw 1ton.
Especially compared to a 14 year old short bed truck.
One great point I like here. I laughed about your class8 tractor comment, :B I wondered how much the age of the truck contributed to its ability to tow comfortably. Sure my current truck tows a lot and does so just fine, but technology and research has come a long way in 14 years I'm sure! I just haven't towed with a newer truck to know exactly how much that has changed. Not to mention, 800ft/lbs vs my 520ft/lbs sounds awesome too! :B
It's not like your LB7 gives up much in raw capability.
I've had a 02 Dirtymax, the 07 Dodge in my sig, a 2014 Ram diesel at work and about every Ford gasser from the same time period. My Observations in general are, the tuned, otherwise stock LB7 would walk the rest of the trucks like a dog in a drag race and it towed, power wise, just as well as the other 2 diesels.
The mass of the new Ram, combined with generally heavier duty chassis and brakes (same rear axle coincidentally 12 years later) just makes for a more stable ride. Bigger rims=less sidewall flex, not having 14 years of "use" makes a difference as well. And you could easily be over 2' longer wheelbase.
All that will add up. Truck won't drive itself and the old Dmaxes are super capable but yes there will be a difference upgrading to new model of any brand.
