I don't believe there is much to see in western NE if you don't get off the Interstate.  However, if you are in to US history and have the time, I suggest following the Oregon Trail in NE to spot the meaningful landmarks that guided and gave rise to populations in the west.  For example, Chimney Rock and Scott's Bluff.  In Eastern Wyoming there is a Wagon Ruts State? Park where you can view the ruts made in the rocks from the western trek, and places where the pioneers left their marks for all to see.
