I don't believe there is much to see in western NE if you don't get off the Interstate. However, if you are in to US history and have the time, I suggest following the Oregon Trail in NE to spot the meaningful landmarks that guided and gave rise to populations in the west. For example, Chimney Rock and Scott's Bluff. In Eastern Wyoming there is a Wagon Ruts State? Park where you can view the ruts made in the rocks from the western trek, and places where the pioneers left their marks for all to see.
Since Iowa is my birth state I feel compelled to defend it. There are several things to see in Iowa. Pikes peak state park (yes this was a stop on Pike's way west). Whatch the eagles feeding on the Mississippi at Pikes peak. Effigy mounds now a national park. Maquokata caves state park. Coon Rapids where Khrushchev visited back in the late 50's. Yeah I know that one was a stretch but my father was working for the company that he visited. Quad cities for the John Deere headquarters. There is a huge display of products in the lobby.
Dubuque has had a resurgence of neat little shops revitalizing downtown. Ride the funicular while you are there. See the locks along the Mississippi.
