I kindof feel for Eastern U.S. folks who want to see the West and have to do it on their limited vacation time. We live in CA and visit "the West" a lot in our RV, taking several weeks each time. We still have a bunch more to see and we also do the unthinkable ... we visit the same places more than once. ;)
We recently did the reverse of what the OP tried to do. We visited the Eastern U.S. on an RV trip, but waited until retirement to do it and took 10 weeks to do it. Even then we had to skip a lot of places we would have liked to have visited. We avoid the Interstates and Toll Roads as much as possible on all of our RV trips - and we do not travel in our small Class C over 60 MPH so that we can maybe smell the roses. As a side note, IMHO it's ludicrous to tow anything over 60 MPH no matter what kind of setup is used ... there's just too many laws of physics that can bite you.
P.S. Notice from the link that I provided above there are many things to see in Kansas and Nebraska, and we saw some of them on our RV trips!
