Hi,
I would plan on one night at any of the Moab campgrounds - then spend all the time you can finding a great boondocking site nearby. You might end up spending 2 nights though. Fill with water, and fill any water tanks you might have along with you. Normally you can stay out about 4-6 nights before going back to town to a full hookup place, taking lots of showers, dump tanks and refill with water, enjoy the pool ect, then you will be looking forward to being out in the wild again, with no neighbors.
You can google map Moab, and find places like Horseshoe Point, there are wonderful places that you can camp in that area. Set up for a week at a time!
IT helps if you have a couple solar panels, but a generator will work. Honda 2000 if you don't have anything right now, it is only 47 pounds. Make sure to chain it up at night, or put in back into a storage compartment.
I would spend 2 weeks dry camping, but I only had 2 people, and 100 gallon fresh water tank, with 59 gallon black tank. I could actually go 3 weeks if I bought back about 15 gallons of water while out sightseeing.
Hope that you have a great time, personally I would be a bit worried about finding a job to start a long trip though.
