Manufacturer's selections for OE tires are not binding for replacements but do set the standard. So, more load capacity is better but not a requirement.
The notation and concern of the OP is frequent tire failures and short life expectancy. Questions arise as to proper axle alignment, for starters.

FE, off topic, I've asked you before, but you either have me blocked or missed my question, but was wondering where the picture was taken of your truck and 5er...looks like off I26 at one of the overlooks, is that correct? Just curious...nice looking combo by the way:)
