First option would be to tell her to suck it up, she's driving. Looking at a $1500-2000 savings over the other options, it just makes sense.
Alternatively, do you have a friend or relative that you would trust to drive the truck and would enjoy a week or two on the road?
Otherwise, flying back later makes the most sense but figuring $1000-1200 for tickets plus hotel and restaurants while driving the truck back makes more sense than trying to outfit the MH to tow a big dually truck.
I'm sure you could pay a shipping company but figuring say $2/mile and they probably will add a fee for the drivers airfare back home will get pricey real quick.
