There are probably as many weekenders out there, towing over at least one limit, as there are people towing within limits. If the hitch is strong enough, it will likely tow the trailer. As for staying under the speed limit, most ST trailer tires are rated 65 mph max. In your case 60 mph towing may be best.
Make sure your trailer brakes work well, and watch tow vehicle fluids, temps, tire pressure, etc.
Being an extra cautious, safe driver, may help some too.
