I repeat: IF the transmission will lock into overdrive and STAY there except for going up hills/mountains, then you should LET IT DO THAT.
If the transmission is not locked up (OD), the torque converter will still be active, generating extra drag and HEAT.
You are overthinking this. You will KNOW if it is "hunting" too much. Let it work the way it was designed to work.
