What I have found on steep hills is to maximize engine torque by maintaining around 4000 rpm (my truck anyway). The speed I travel will be dictated by what gear I need to be in. What I try to avoid is redlining the engine.
As far as transmission temp, it is basically the load and reduced wind flow (slower travel speed) going up Hills that causes transmission temp to rise.
