I did this very thing. I installed new crimped PEX throughout the trailer but had one length of copper 1/2" exiting the water heater. The PEX and copper pipe are joined with a Shark Bite fitting. FWIW, I have used the plumbing system at street pressure a number of times and have no leaks.
