Why is the woman supposed to be "much younger than the man"? So she can take care of him when he's old?
No. It's because women mature much younger than men do. There are exceptions, but generally speaking, a 25 year old woman has about the same maturity level as a 30 or 35 year old man.
5-10 year age difference isn't the 20+ that DallasSteve is referencing.
If the norm is a man about 5 to 10 years older, then your example of a woman 12 years older is about same as my example of a man 24 years older. If a man 7 years older is the average you have:
Your example: 12 + 7 = 19 years off the norm
My example: 24 - 7 = 17 years off the norm
Anyway, it's just averages. A significantly older man is more likely to be faithful than a significantly younger man for reasons I probably don't need to explain, but there are lots of exceptions on both sides. Vice versa is probably true, too. But as far as healthcare costs which is what led to this discussion, having a younger partner is usually an advantage.
