The smell is a byproduct of anerobic bacteria in the tank. I drain the hot water tank when it will not be in use for any period of time. With new fresh water I add 1 tsp. of household bleach for each 10 gallons of water in the fresh water tank is enough to keep the bacteria at bay (per FEMA guidelines for extended water storage).
