I use a food-safe 55 gallon plastic drum for boondocking refills. Instead of purchasing a separate pump, I hook into my "city fill" port, set the control panel lever to "Sanitize/Winterize/Drain" and use the on-board pump to draw water from drum to tank. Works great, and only cost me $30 in parts including the drum.
Not a bad idea at all using the winterizing hose! I actually provided hot water to the camper by doing it this way when my water heater went out a few week ago. I only had a bucket of water heated on the stove though, and then pumped it and was able to take a nice warm shower.
In my case though, reaching for the by-pass on my on-board water pump is a little awkward as it's under the bed, and I'd need to get a much longer hose attached and get it to the outside of the camper somehow. Still, the idea you have there is very good. I like it!
