If she refuses to do so now don't be too sure she'll do it in an emergency. She'll be petrified. She needs the driving experience now - when things are calm.
Not taking over when you're tired puts everyone in jeopardy of an accident. If you're tired. Stop.
Teaching a person to drive the RV once or twice is not 'experience driving'. The person needs to do it often. Take turns doing it and the person will get to be very comfortable and perhaps even better at it than you. :)
