Trying to find a TT that can fit all 5 of us plus the family dog; really happy with the Suburban (until now) and would prefer not to upgrade the vehicle at this point. Found a used 2016 Forest River Salem Cruise Lite 201bhxl for $9500 out-the-door which sounded perfect... as much as I want to make it work, we would also plan on taking it into the mountains.

Hmm thats heavy.. Not bad but it is a 7500 lb trailer.
Since you say you will tow in mountains you will need a trans cooler.

You will be best off starting with this type of hybrid. You can sleep 8 and all will be comfortable.
