OP here - lots of good ideas folks! Things I should have thought of, but didn't. You get used to camping (and cooking and eating) a certain way and you need a little help to think differently. ;)
One I'll be using for sure is frozen vegetables. When traveling with the trailer we depend on canned veggies simply because the freezer isn't big enough.
Another good one is frozen entrees to be microwaved. I can make things up ahead of time and freeze them.
With the B we just don't have much room to bring things - like the grill. So all the cooking is done on the stove top or in the microwave.
