I would choose a car that you would use as a daily driver, preferably under 3000 lbs. I am assuming you have a gas MH so check your GVWR and stay under it. If you look at the dingy towing guides for the year tow car you want they will tell you which cars are flat towable. Most of the older manual transmissions(not all) can be towed flat by shifting to neutral and turning the key to ACC. Each year there are fewer cars that can be flat towed.
