Your 1320# of tongue weight will cause around 600# of load to be removed from the front axle when hitched with no WD applied.
The scales data indicate the WDH is restoring only 200# to the front.
IMO, you need to transfer at least 400# and perhaps as much as 600# to the front.
I recommend you increase the load on the WD bars to increase the front-axle load transfer to about 400#, and see how that feels.
That will make the steering even more responsive.
It also will double the amount of sway resistance which can be generated by the bar/cam system.
Even at 400# of load transfer, you will not be close to having too much bar flex. The bars are springs -- they're supposed to flex.
Your 1200# bars should be fine even if you decide to go for 600# of load transfer.
If you re-adjust the WDH, be sure to re-center the cams in the bar detents.
For your 2005 2500HD, Chevrolet specifies that the front end should be returned to the unhitched height.
That would require a load transfer of about 600#.
