Petterson Field Guides publishes a soft cover or slick tough soft cover or something of the sort titled Edible Wild Plants.
It has descriptions and effects, some plants have if not prepared properly and drawings, of plants and some color photographs of several.
the one I hae is of eastern/central North America, so I guess you would need to buy a separate guide for the west.
