We usually travel with four passengers so I bought a Class C 30' ten years ago and we're still going strong with it. If you're only going out on two/three week forays at a time I suggest staying with the Class C only going to one of the smaller ones now available. You'll have plenty of room for two adults and get good mileage and you won't need a toad. This is what I'd do if it were only the wife and me.
