You say you're a bit abusive to the inverter, but I'm guessing not all that abusive. You're probably not cooking much microwave popcorn on a pair of GC15s.
Speaking of which... I'm having a little trouble recalling, nor finding on google... how GCs do in regard to max continuous discharge current. So how would 4 GC15s handle the load of your standard 1,000W microwave, drawing maybe 1,600W or so?
I would not advise LFPs for your scenario. There is a lot to know so you do not ruin them. You don't need to bother. I agree with PT that they are "fussy" , but you get hate mail on here (really!) if you are not an LFP groupy. :(
On inverter draw you are at say 150 amps with MW so 150/460 = 33% not too bad. You can run for 10 or 15 minutes no sweat. 37AH. Voltage drop on just two means inverter alarm at 75% , but with four you can keep doing it until around 50% SOC.
Solar keeps you in the high SOC zone, so you can do it for supper with two 6s and solar
