Just about any stat designed for 750 mA will work. If digital it will have to have a battery. My AAA batteries last a year.
It seems a real CT53K costs three times what these others cost, so I am tempted to just get the digital one and try it out.

I am unclear on which voltages do what. Is the 750 only inside the thermostat and it opens or and closes the switch, while the 12v has nothing to do with anything except being the voltage on the line being switched? Or is the switch supposed to be a "12v switch" but is not in these digital ones? If so is that bad for the switch?
The 750 refers to the type of valve being used. This is a very low power valve that uses the power from the thermocouple in the pilot flame. This type of circuit must have a contact that will handle DC voltage. YOU NEED THAT.
I gather 24v AC is for making a cleaner switch action but this switch will not have AC ( ?) so is that a problem?
Stats that can only use 24VAC use triacs to switch the power, triacs are not able to switch DC.
