Water pressure is the function of the pump, mostly. My current pump is Flojet, 50 psi as I recall. Will be replacing it with Shurflo Revolution (reportedly quieter), 55 psi. At 6 ft height the pressure seems to be just enough to lift the water up to this height, with not enough pressure left at the head to give it a nice "barrel speed".
After water has left the head, there is no "pressure" anymore, and can't be, - there is only speed and width of spray. Sounds like those low-flow heads are able to increase the speed somehow.
