Since you have no 12v items I think you may as well go 24 volts as your primary system. The large 24v panels are less money and can be used with PWM controller to charge at 24v just fine. No more switching back and forth between 12v and 24v. Will need to buy a second battery for the van.
To do this you will need 24v (2x 12v batteries) permanent in the van and permanent connected to the solar. Then have your 2x 12v portable batteries for driving the 2hp motor.
Of course charging from solar is during the day.... you can't charge and use your portable batteries at the same time. It will be every other day at best depending on the level of charge.

Or a 12v system. Solar will cost a bit more. Don't need a second permanent battery in the van. Your portable batteries with Anderson connectors could plug in parallel to the 12v system and charge just fine. In the field you could wire an adapter with Anderson connectors to output 24v to the motor.

No you cannot have the same batteries in both series and parallel at the same time.
If two batteries and a 2hp motor can move around.... Honda 1000 should not be an issue.
