500amphrs of AGM or 400ampHrs of lithium
300 Li would work if you were real careful NOT to exceed 230amHrs
because that puts them 24% SOC, thats why i said 400
now to do solar you have to recharge WHILE working
because your work hours extend beyond primary solar collection, you have major issues
my first choice would be a larger vehicle with a roof top covered in solar
1000w or more
if you insist on staying with a Van aka class B
i suggest a built in gas genny and use it every day to recharge and supply daytime power, using batteries only at night
