at high temps and higher altitudes I have the same issue as the OP with the parallel hondas and the EMS. the issue is the EMS low voltage dropout. Endless relay chatter from the input voltage dropping to low before the generators can rev up. so I just turn off ecoboost to get the AC started. and on conditions like this the AC tends to need to run almost continous anyway so then I turn ecoboost on.
otrfun and soundguy summaries are very accurate.
In my case, the voltage from the generators in eco mode will drop below the 85V or so needed to keep the relay mechanically engaged, the coil voltage drops to low which then disconnects the source (genny) which thing recovers.......... get the picture, relay chatter. and there really is nothing adjustment wise that can be done. If this is the case, even turning the EMS off won't help, the relay will keep chattering, only solution is to turn off eco mode.
Now, with all that said, I have a coleman MachIII AC, which based on feedback and experience from others on the forum, is one of, if not the, hardest AC to start, even with the soft start cap installed. Dometics seem to be much better.
