I suspect your biggest problem is poor design/installation. The upper vent isn't high enough due to the design of the camper.
Also one of the most critical things that fans and insulation cannot correct is the space between the cooling unit and outside wall. If the air goes around the cooling unit instead of thru it, nothing else will help.
What the upper baffle accomplishes and I added one. I have plenty of airflow up through the cavity with 2 125 CFM muffin fans pulling the air up and out anytime the evaporator is above 100 degrees (f).
RV builder never take into account correct installation, they just stuff the unit where it's convenient to their interior layout.
It's not an issue (warm fridge temp) in reality it's the long cool down and the interior temp swings that concern me. I want a steady interior temp not impacted by external temps and to a lesser degree, the hazardous chemicals used in the cooling unit itself and the open propane flame. I've read of many instances of RV's catching on fire from failed cooling units couple with poor maintenance on the owners part.
A Secop/Danfoss unit is a sealed system, no flame, no hazardous chemicals, basically maintenance free and the evap is an integral unit so you eliminate all the external stuff associated with an ammonia fridge.
