If the plastic boxes damage your wiring insulation, as long it doesn't tough anything conductive or another wire, it wouldn't matter anyways ;)
Now if it was a METAL box rubbing through the wire.... :E
I've found extension cords to often be undersized for their supposed rating. A roll of wire is easy to come by at any box stores- or check Ebay, just watch the shipping.
If you are concerned about rubbing or even hitting your wires with nails or screws or whatever while building your RV, you can always use armored cable. It isn't that much, just requires a $20 cutter for it.
That's about as tough as you are going to get without major bucks ;)
