I am usually an advocate for the "do it yourselfer". But in this instance, because of the potential for creating an electrical shock hazard and/or destroying equipment, if you are not that comfortable with electrical circuits then I suggest that you look for a different solution.....like running the refrigerator on propane.
I find that unless it is hot (like over 90) out, I can usually get in a full day's travel with the refrigerator turned off. Maybe turn it on for a hour or so at lunch. Also, a full refrigerator stays cold longer than an empty one.
BTW. I measure cold by how well my ice cream stays frozen. Cold drinks are easy.
