Yes with full hookups you can leave the gray tank valve open but NOT the black tank. What happens is the fluid run out and leave the solids. Good idea to put some water in the tank when starting and use plenty of water when flushing solids. Not sure what brand of bowl you have but ours has a foot operated flush. Lifting the foot lever up with your toe fills the bowl. If yours has a hand lever it will have a separate rinse button that runs the water without opening the flush valve.
If you fill the bowl half way with water before depositing solids, it will keep the solids from sticking to the bowl and also give you a nice strong flush.
As was stated, leave the black valve CLOSED until you are ready to dump, even at a full hook up site, and you will get a good strong tank emptying dump. We have a 40-gal black tank and easily go 4 people for a week without filling it. Trust me you will know when it's getting full. Tank sensors are fun but the cheap ones that come with the RV are pretty worthless.
