I have a Canon 50D, 18-55 lens, 55-250 lens, and the 100-400 lens. All are image stabilized.
I think any of the Canon DSLR's (18 meg or better) will do you fine. The 18-55 comes with most the "amateur" cameras and is fine for walk around use. The 55-250 I have to take pictures of grand-kids doing sporty type things. The 100-400 is a superb lens for wildlife; I carry it whenever we're looking at birds or wildlife; but, its heavy.
The 75-300 IS lens is a pretty good compromise for long shots, resonable price, not too heavy, and most reviews give it pretty good marks.
