Regardless of what initial R you pick, if it is in the range that will provide adequate protection and be in the range of your max expected current, the operating temperature of the thermistor will likely be very close to the same temperature independent of initial resistance.
So a 1 ohm, 2 ohm, 5 ohm initial resistance device designed for a max current of 15-20A will likely all be a similar temps for similar steady state current draws.
ken and others may have more data, but seems like the few device spec's I've looked at all show around 240C max temps at max current.
