Presumably your Norcold 621 is a 2-way DSI fridge which means it doesn't use any DC power for actual cooling - it's either running in GAS mode or 120 vac. When running in gas mode it still requires 12 vdc to power the circuit board, operate the gas solenoid, the interior light, and of course the moisture control heater but doesn't use any 12 vdc power for actual cooling. If you're asking because you want to dry camp, don't have shore power available, and therefore want to preserve your battery reserve as much as possible you ought to be primarily concerned about that power pig "moisture control heater" - turn it off OR if it can't be turned off disconnect it.
