For the same reason you don't see large doors/windows on airplanes (cargo planes excepted), full length sliders are generally a bad idea on motorhomes. In order to build rigidity into the structure, you must build around the "hole" in the structure with more structure than usual. (read heavy, expensive, etc.) The inherent flexibility caused by the hole causes increased deflections in the coach when loaded both statically and dynamically. Those deflections over time tend to cause rattles, leaks, (air and water) and flexibility where you DON'T want it. IMO, it can be done, but, the larger the hole, the more you are asking for trouble. Lets not even talk about what happens in a collision.
