I'm guessing it is a straight up stock 110V AC water heater that he is running off his inverter. This inverter load pulls down the battery voltage when his solar "gets in the way." I am not quite clear on what is happening as he describes what happens with his alternator while driving though.
Not sure the alternator would ever get voltage at the inverter high enough to cut out on a typical OEM alternator.
