Not only smell, but when you leave the blank tank open, the liquids drain out and the solids generally don't. And when the solids stay behind, you may have a major chore getting that "poop mountain" to go away.
Keep the black tank closed until it's at least 3/4 full before you dump. Whether you leave the gray tank open or closed is optional, and you'll get advocates for either. On our rig, the black tank sensors tend to foul, but the gray tank sensors work fine. So when the grey tank shows full, we know the black tank is also probably ready for a dump.
And if you use the park showers rather than your own, that wouldn't work very well for you.
