I'm not following your logic on that. I can't imagine you will run the generator enough when boondocking to have much impact on propane use. We boondock, mostly. And we have the electric/propane WH model. I have the electric side locked/pinned in the off position. I'll never need it, not even on shore power.

On second thought, I’m looking to augment the propane, not replace it. While running the genset 4-5 hours a day the water heater would be heated. In spite of altitude or igniter problems, and provide a back up heat source. Propane the rest of the time. It’ll take fuel, gasoline or propane, to provide the heat. Pick a tank.
Keep in mind, we boondock high and cold and I like options ;)
