Think I have pretty much figured it out and is simpler than expected. Looks like I've found a nice used dish for cheap and then all we'll need is a tripod, some cable, signal finder and a compass.
Looks like I can use dishpointer.com to get the required azimuth, skew and elevation depending on where we happen to be camping.
