OP said Remember, our plan is to alternate between hookup camping and boondocking over a six month period. Any other suggestions?
With those two batteries dry camping and min electrical reqs( water pump, refer, WH and a few lights) you should last a week before your batteries need to be recharged. After a week my batteries are at 50% SOC. I have 60 gals of freshwater and always run out of water before battery power. After a week we run out of clean clothes and my wife wants to wash the bed sheets so we go to a FHU CG with a laundry to wash and to fully recharge batteries. If you do something close to this, use some batteries powered lights inside the RV you should not have any problems and your batteries will last a long time.
