The flash is normal- it flashes while producing a spark, so when the flashing stops, the flame is lit- keep holding the button for ~15-30 seconds after the flashing stops. It will take a long time the first time to get the LP up to the refrigerator.
That's a great refrigerator- you can, in a pinch, light it manually (with 2 people) and run it with no 12 volt power.
As to running it on LP while driving- it's a personal comfort issue. Many (most?) people do use it like this. Some are not comfortable running it. The only real issue is while fueling up, and going through "under" tunnels (as opposed to "through" tunnels).
