I believe Solar Blvd has similar (identical?) kits.
Never liked them and said this many times, and finally the message started getting through - or people have learned from their own mistakes. The only good thing about these kits is 2*100 panels. Not that these panels are something special, but panels are usually the least critical component.
Z-brackets are not good for roof mounting, you need either L-brackets or 2-piece Z-brackets.
Provided MC4 cable will be either too short - don't forget that you will cut it in half, or too thin. It sounds like you had to buy a different cable already.
Controller - I don't know, nobody does. One of those nameless things from China, cloned from something else. Hopefully it will work as it should - sometimes it doesn't, or does for a short while only.
Yes, 200W in summer in most climates is enough for basic needs like LED lights, pumps, radio/CD and DC circuit of LP fridge.
Yes, you can add another 200W to the same 30A controller - total 400W - but it has to be all wired in parallel. I agree with Roy, it's better/safer to keep it all on the roof when you're away hunting.
And, if you were to mount 4*100W panels on the roof, keep in mind that unless your roof is too small and challenging, it is easier to install 2*200W panels than 4*100W. With 2*200W you would need a different type of controller, it's called MPPT.
Heater... Not sure. On a clear winter day a 200W panel might harvest enough to cycle a furnace a couple of times. Roy is correct, Mr Buddy is dangerous in enclosed space. And so is Camco aka Olympian aka Wave - it is NOT vented to outside, so you have to keep windows slightly open. I know of only one vented catalytic heater, US-made, more expensive than Wave, but it appears they are having production problems, can't get my heater from them for 2 months already.
