Well yes and no. In defrost mode, most modern AC systems for vehicles send air through the evaporator core (compressor on) and then on to the heater core before it comes out the defroster vents. That way you get a double whammy effect. When ambient air goes through the evaporator it dehumidifies (drys) the air, then when it goes through the heater box it heats up the dry air. Thats the perfect recipe for defrosting the windows especially in humid environments. Often, but not always, you, the driver, have some control of the heat function.
