I think the fan would run all the time during the day with just the snap switch. The snap switch and the relay is a slick setup. The axillary fan only runs when the controller calls for it and then shuts off all together at night when it cools off. I used a 90F on/80F off snap switch and mounted it at the top of the refrigerator box.
I used a Thermaltake fan, they made the quietest fans when I was looking for low db levels.
Here's the one I used. it's much quieter than the condenser fan since I'm running it pretty slow:
